Homemade Almond Cashew Butter

Hello ladies !
Hope you doing great !

wow , i can't believe i'm finally sitting down and writing this post ...
I've been very busy lately , i had to postpone this 3 times !
so let's get to it before i change my mind ... Hehe !

As i mentioned in previous posts , i try my best to eat clean food and love to make food i love at home .. one of the things i enjoy snaking on is peanut butter and jam sandwich ( low fat PN butter , sugar free jam and whole grain bread) ... but after a while it just got boring , so i started looking for alternatives and found a lot of great things about almond butter and cashew butter...

There are lots of great things about cashews... they're full of good fat and fiber, have no cholesterol, and lots of magnesium and almond butter,  is full of  vitamin E, potassium, magnesium, iron, calcium and phosphorus. Almonds are a good fiber source and also contain protein.

Since i had some cashews and almonds (and motivation) in hand , i though I'd make some almond-cashew butter with a little personal twist ... chocolate !!
This is a No-Brainer recipe it's so easy i don't think i should call it a recipe ! LOL

Throw in a food processor :
  • 1 cup of mixed roasted cashews and almonds ( let them cool before transferring to the food processor )
  • ½ tablespoon honey
  • ¼ teaspoon  salt
  • 1 teaspoon coconut palm sugar
  • 3 squares of extra dark chocolate ( the small chocolate squareS that are usually served with coffee)
and start blending !
turn your blender on for few seconds until you have a coarse meal as in the photo 2.
blend until it starts to clump together , scrap down the sides to the center near the blades.(3-4).
process a little more , and this time you'll get a dough like consistency . ( i kept some aside to make nut truffles ).
keep blending and you'll eventually get a creamy smooth nut butter .
the whole bending process takes approximately 12 minutes using a regular food processor
you can enjoy this delicious almond-cashew butter for the next 2 weeks ! (keep it in the fridge )

See.. super easy right ?
What's your favorite nut butter ? and how to you like to enjoy it ?

Peace .
Mariam Ahmed
